Thai Sticky Rice (not Jasmine Rice) – 50g
Ripe Mango – 1
Coconut Milk – 200ml
Sugar – 200g
Salt – A Pinch
Salted Moong Dal – For Garnish
Who doesn’t love Mango Sticky Rice? This classic Thai dessert is simple, yet magical, and Chef Seefah Ketchaiyo of restaurant Seefah in Mumbai shows us her secret to getting it perfect, every time.
METHOD & RECIPE:
Soak the sticky rice for 1 hour.
After soaking, wash and steam without water for around 30 minutes and set it aside.
For Coconut Sauce:
In a saucepan, bring coconut milk and sugar to a boil on slow flame.
Stir until the sugar is completely dissolve.
Transfer the steamed sticky rice to the coconut milk mixture and stir. Cover and allow the rice to set for 20 minutes.
For the Salted Coconut Sauce on Top:
Heat coconut milk in a small pan and add a pinch of salt and combine.
Peel & chop mango and top it on the coconut sticky rice. Drizzle the salted coconut milk and garnish with salted moong dal.
